As a Leatherworker in World of Warcraft you make leatherarmor and armorpatches out of aminalskins and furs. These are then used to make metalarmor und better weapons and are an alternative to enchantment. Certain classes like Druids, hunters and rogues can only use leatherarmor so they are dependend on the leathermaker.
Working with leather is simular to the furrier, because you can get your own materials. At a higher level you can specialize in in being a dragonskin-, element- or clanleathermaker, to then make stronger items.
